About the RoleWe are seeking applications for the casual role of Demi Chef. Reporting to the Executive Chef and nominated Sous Chef, you will bring valued contribution to the daily operations of QPAC's smooth kitchen operations and management, working across five food outlets within the one building! Serving large numbers of patrons on a daily basis, we are looking for your driven and professional attitude and passion for producing quality food within an exciting and busy industry. You will be directly involved in the smooth management of food production for designated Food and Beverage outlets, including stewarding operations.
This is not a 9-5 position and requires a high degree of flexibility in their work times as the majority of shifts are rotated over seven (7) days, predominantly during evenings and weekends to meet operational demands. As a minimum requirement to meet business needs, applicants must be available for a minimum of three (3) shifts per week. Within this availability, staff must be available for one (1) shift on a Wednesday and one (1) shift on a Saturday.
In this role you will:
- Assist the Executive Chef/Executive Sous Chef to manage all functions of the designated F&B outlet’s food production and stewarding operations to achieve the optimum departmental profit.
- Assist the Executive Chef/Executive Sous Chef with internal special events and special food promotions in conjunction with the designated F&B outlet chefs.
- Assist in drafting concept ideas and menus for selected special events and functions.
- Assist in ensuring that kitchen areas are maintained in a hygienic condition at all times, ensuring adherence to standards.
- Assist the Executive Chef/Executive Sous Chef in developing and writing standard recipes and maintain updated and accurate costings of all dishes prepared and sold in the relevant outlet’s operation.
- Assist the Executive Chef/Executive Sous Chef with ideas in developing new dishes and products according to customer expectations that are value for money.
- Take steps to ensure that outstanding culinary technical skills are maintained.
- Supervise and mentor apprentices.
- Ensure the preparation and presentation of all food items is in accordance with QPAC’s guidelines.
- Maintain comprehensive product knowledge, including ingredients, equipment, suppliers, markets and current trends and make appropriate adjustments to kitchen operations accordingly.
- Help to maintain an up-to-date kitchen policies and procedure and update files on the following food production matters: recipes, finance, standards, personnel and training, promotions, meetings, projects, material and equipment.
To be successful in this role, we are looking for:
- Proven experience cooking to a Demi Chef level within a commercial kitchen. (Must be a Qualified Chef/Cert III in Commercial Cookery)
- An eye for detail and presentation, along with a passion for creating exciting and high-quality food.
- Demonstrated communication skills, both written and verbal.
- Ability to build and maintain positive relationships with all internal customers and guests in order to exceed their needs.
- An ability to monitor and maintain consistent standards relating to quality, presentation and hygiene.
