The Hotel
The Novotel & ibis styles Melbourne Airport is a new dual-branded, 464-room hotel opening on 1 July 2024.
The Novotel Melbourne Airport with 248 rooms, and ibis Styles Melbourne Airport with 216 rooms, will be located just steps away from Terminal 4, Melbourne Airport. Guests will enjoy access to a fitness centre, conference rooms, pool, co working space and a number of Food & Beverage venues which form the hub of the mixed-use precinct.
This will be a village centre supporting the airport community as a place to gather and socialise for everyone who travels and works from the airport precinct.

The Role
This is an opportunity to develop and execute the Food & Beverage strategy for the hotel and take full accountability for business goals. This position reports to the General Manager, collaborates closely with the hotel leadership team, and is responsible for Food & Beverage business, talent development and maximising revenue and overall financial performance of the various venues;

- Bocatta Italian restaurant and bar
- Amber State taphouse & BBQ
- In-room dining, mini bar and banquets
What you’ll be doing ?
- Designing, costing and implementing innovative menus incorporating both Accor standards and standalone venue positioning
- Owning, creating and driving revenue
- Maintaining Food, Beverage and wage costs in line with budget
- Staying aware of market trends on food and competitors
- Proactively setting, implementing and reviewing service standards
- Ensuing safety & hygiene standards & compliance across the food and beverage operation to achieve HACCP standard
- Employee recruitment, training and development including - people succession planning for sustainable success
- Proactively creating unique experiences tailored to the Visitors, Clients and Guests
- Utilise interpersonal and communication skills to lead, influence, and encourage others; advocate sound financial/business decision-making; demonstrate honesty/Integrity; leading by example
