Connecting three iconic heritage buildings into one vibrant cultural destination. A precinct where health and wellness, retail, and luxury accommodation meets cafes, bars and fine dining restaurants. The State Buildings is home to luxury hotel COMO The Treasury and several leading restaurants including Wildflower, Post, Petition and Long Chim.

Executive Chef

Reporting to the Director of Food and Beverage, this role is responsible for overseeing culinary production and leading a team of Head Chefs to deliver exceptional dining experiences. This role requires a passion for culinary excellence, strong leadership skills, and a creative approach to gastronomy.

This is a key leadership position within our Food and Beverage team. It is important for candidates to understand that the State Buildings is undergoing a significant cultural change within our food and beverage operations and we are looking for an engaging, passionate leader who can inspire, support, mentor and lead our kitchen teams. Our ideal candidate wants to see the team succeed above all else, invests time in the growth and development of the team and prioritizes communication.

As well as leading the kitchen teams, the Executive Chef is responsible for the following:

Menu Development:

Creating and updating menus in collaboration with Head Chefs and the Director of Food and Beverage, emphasizing innovative culinary concepts, locally sourced ingredients, and seasonal offerings that cater to diverse guest preferences.

Food Quality and Presentation:

Maintaining the highest standards of food quality, taste, presentation, and consistency throughout all food outlets, ensuring a memorable dining experience for guests.

Cost Control:

Developing and implementing effective cost control measures, including inventory management, portion control, and waste reduction, while maintaining quality standards and guest satisfaction.

Collaboration:

Collaborating with other departments, including food service, beverage, events, sales and marketing, to ensure seamless coordination and execution of culinary services for events, special occasions, and catering requests.

Health and Safety:

Ensure compliance with all health, safety, and sanitation regulations, maintaining a clean and safe working environment for the culinary team and guests.

Supplier Management:

Establishing and maintaining strong relationships with local suppliers and vendors, ensuring the availability of high-quality ingredients and products while optimizing costs.

About You

You are a really strong, inspiring and supportive leader. You have managed multiple venues at Executive Chef level and have excellent time management and prioritization skills. You have experience in, and understand the workings of Hotel restaurants, in-room dining and events. You are passionate about showcasing local produce and have a strong interest in sustainable practices. You understand and truly believe our teams are what makes us great, and you make sure they know that too.
