ESS provides multi-service capability to major companies and organisations operating in remote sites, gold mines and coal fields. We provide vital workplace support for people working in some of the most isolated terrains in the world, from oil rigs in the North Sea to gold mines in the Australian Outback.
Due to anticipated growth across our flagship portfolio in Moranbah and Dysart region in Central QLD, we have exciting opportunities for experienced Head Chefsand Sous Chefs to work remotely on a 14:7 roster (2 weeks on, 1 week off).
Flights ex Brisbane, accommodation and meals all provided. Locals also encouraged to apply for drive-in, drive-out.
The Positions
- Work collaboratively with a team of Chefs, Kitchen Utilities and Dining Room employees
- Buffet style bulk cooking for Breakfast, Crib, Lunch, and / or Dinner and Desserts
- Ensure OH&S compliance, adhering to safe work practices and food handling procedures
- Ensure all catering controls are in place, and wastage is kept to a minimum
- Maintain high standards of food hygiene, safety, infection control and cleanliness in accordance with Compass standards
- Managing catering team performance and employee development
The Person
- Chef Qualifications / Cert III in Commercial Cookery
- Experience within bulk catering environments
- Experience working in the remote sector
- Excellent knowledge of all kitchen procedures and operations
- Experience in menu writing, rostering and cost control
- Experience with hygienic work practices and appropriate HACCP guidelines
