Food and Beverage Manager 

The National Zoo and Aquarium is one of the highest regarded zoos in Australia which recently was acclaimed in the Australian Tourism Awards as in the top 2 Major Tourist Attractions in Australia. It is also home to Jamala Wildlife Lodge, which continues to receive worldwide attention and reviews, consistently rating it amongst the top animal lodges in the world.

We are currently looking for an energetic professional to lead the day-to-day operations of the zoo’s:

• Rhino Bistro and kitchen
• Jungle Vines Café
• Meerkat Snackshack, opened on busy days
• A smaller operation including events and functions

They will have the backup and support from experienced supervisors as well as Jamala Wildlife Lodge’s Food and Beverage Director.

Role

The role will be the overall management of the Rhino Bistro and kitchen, Jungle Vines Café, Snackshack and occasional events and functions, including handling:

• Staff recruitment, training, rosters, supervision and management of kitchen staff and F&B staff
• Supervision of all matters pertaining to food including the kitchen
• Ensuring Food Safety and OHS regulations are adhered to.
• The hygiene and cleanliness of Food and all eating areas
• Monitoring Food and drink availability at all outlets
• Daily and weekly stock ordering as well as monthly stock take.

The role is a hands-on position with the Manager taking an active role in serving customers.

The Rhino Bistro and Jungle Vines Café also have visitor entries. The Food and Beverage Manager will have the scope to take on responsibilities covering Guest Services should they demonstrate the ability and desire to grow into that area.

• A professional attitude.
• An ability to train, motivate and supervise others.
• The ability to oversee experienced supervisors in each area.
• A proven commitment to upholding excellent customer service standards.
• The ability to ensure Food Safety and OHS regulations are adhered to.
• Excellent personal presentation.
• Experience in handling cash and EFTPOS transactions and reconciliation of takings.
• Be prepared to regularly work weekends and public holidays.
• The ability and desire to work the bistro servery in a hands-on capacity.

Salary by negotiation and will be dependent on the experience of the successful applicant. Should an applicant have experience in both F&B and Visitor Services, this will be considered in salary negotiations.
