Job description

Crystalbrook Collection Reporting to the General Manager and the Area F&B Manager, the F&B Outlets Manager is responsible for Food and Beverage daily operations, including restaurants and bars, Room Service and Conferencing/Catering.

The position oversees the development and implementation of departmental strategies and ensures implementation of the brand service strategy and brand initiatives. The position ensures the Food and Beverage/culinary operation meets the brand’s target customer needs, ensures employee satisfaction, and focuses on growing revenues and maximizing the financial performance of the department.     Benefits Discount Accommodation across our hotel portfolio 50% off all Food and Beverage across our hotel portfolio Free vocational training through our online College Free Coffee Paid Earth Advocacy Day Additional Leave after  2 years of service Task & Responsibilities Develops annual Food and Beverage operating strategy and promotional calendar that is aligned with business strategy and leads its execution.

  • Planning menus in consultation with Chefs.

Develops and manages Food and Beverage budget. Monitors the department’s actual and projected sales to ensure revenue goals are met or exceeded and opportunities are identified and addressed.  

  • Supervises daily Food and Beverage shift operation and ensures compliance with all policies, standards and procedures ensuring operational needs, service and financial objectives are met.

Ensures cash control and liquor control policies are in place.  

  • Ensures that regular, on-going communication occurs in all areas of Food and Beverage (e.g., pre-meal briefings, staff meetings, culinary team).

 

  • Develops and oversees an order and purchase strategy for equipment and supplies.

 

  • Sets expectations and holds Food and Beverage leadership team accountable for demonstrating desired service behaviours.

 

  • Maintaining records of stock levels and financial transactions.

 

  • Works with outlet managers to determine areas of concern and develops strategies to improve the outlet performance.

 

  • Focuses on achieving profit margins without compromising guest or employee satisfaction.

 

  • Utilizes interpersonal and communication skills to lead, influence, and encourage others; advocates sound financial/business decision making; demonstrates honesty/integrity; leads by example.

 

  • Establishes and maintains open, collaborative relationships with direct reports and entire food & beverage team.

Ensures direct reports do the same for their team.  

  • Identifies the developmental needs of others and coaches, mentors, or otherwise helps others to improve their knowledge or skills.

Sets goals and expectations for direct reports using the performance review process and holds staff accountable for successful performance. Ensures that expectations and objectives are clearly communicated to team; employees are also open to raise questions and/or concerns.  

  • Stays aware of market trends and introduces new Food and Beverage products encouraging innovation to meet or exceed customer expectations, generate increased revenue and ensure a competitive position in the market.

 

  • Be present in the outlets, taking reservations, greeting guests and assisting the Food and Beverage Team.

 

  • Reviews findings from feedback and guest satisfaction results with Food and Beverage team and ensures appropriate corrective action is taken and to identify areas of improvement.

Shares plans to take corrective action based on feedback and guest satisfaction results with property leadership Work with People & Culture & the General Manager to recruit food & beverage team members who demonstrate strong functional expertise, creativity and entrepreneurial leadership to meet the business needs of the operation.  

  • Selecting, train and supervising Food and Beverage team.

 

  • Ensure compliance with Company policies and procedures.

 

  • Act in accordance with Company Code of Conduct and organisational values.

Comply with all Company policies and procedures, including, but not limited to Equal Employment Opportunities (EEO), Work Health and Safety (WHS), and Harassment in the Workplace Qualification & Experience Minimum of 3-5 years’ experience in a hospitality Food and Beverage environment in a leadership position.  

  • Knowledge of WHS legislation in a working environment 
  • Experience required by position is five to ten years of employment in a related position with this company or other Hotel organisation(s) 
  • Requires advanced knowledge of the principles and practices within the food profession.

This includes experiential knowledge required for management of people and/or complex problems and Food and Beverage management.  

  • Requires excellent oral and written communication skills 
  • Demonstrated strong entrepreneurial characteristics 
  • Leadership – leading teams from different departments to achieve organisational goals 
  • Presentation – Presenting ideas and results to different stakeholders across the business including staff and senior management
