Job description

Are you an ambitious and dynamic individual eager to make a mark in the hospitality industry? Ventia are seeking a passionate, experienced Hospitality & Catering Manager to support and drive success with our Defence Base Services Contract. This position is a full-time permanent role, which will see you working at Robertston Barracks in Darwin NT.

Reporting to the Operational Services Manager, this role will see you support the team with the delivery of hospitality and catering services, reporting and managing incidents as well as implementation of appropriate standards and practices. You will actively manage the H&C contract deliverables, manage and optimize profit and loss, drive team performance, be finance focused and ensure compliance with, company, contract, and legislative standards.

This position will see you primarily working Monday to Friday and on occasion, there may be some after hours and weekend work required in support of functions and high-volume activities.

To be considered for this position, you must be an Australian Citizen and willing to undergo a police check.

Your duties will include, but are not limited to:

  • Management of the safe delivery of food and beverage services, including off-site, away from mess support and functions
  • Develop and implement strategic plans to enhance profitability, always prioritizing service excellence.
  • Conduct of Food Safety Compliance activities including Food Safety Audits and oversight of Hazard Analysis Critical Control Point (HACCP) protocols, processes, and reporting
  • Financial management relating to product deliverables, not limited to food costs, client quotations, supplier and customer accounts
  • Preventive management of food safety hazards
  • Review customer and client comments / feedback on a daily basis, ensuring concerns are investigated
  • Actively identifying hazards, employing appropriate controls, reporting/recording incidents in line with Company standards, and ensure employees received the appropriate training and instructions
  • Actively participate in the recruitment process and identify suitable candidates to join the team
  • Manage employee performance and rostering
  • Prepare and deliver reports and statistics as required

Qualifications/Requirements:

  • Tertiary qualification in Hospitality Management
  • HACCP Level 3 Certification
  • Minimum of 5 years experience managing large commercial catering operations with a demonstrated commitment to service excellence.
  • Sound knowledge of Food Safety Standards
  • Experience managing large commercial catering operations as well as budgets and demonstrated understanding of food costing, waste management and food/site safety knowledge.
  • Ability to use the Microsoft suite and other programs such as SAP, Insight IMS or similar.
  • Project management experience and qualifications – Highly regarded.
  • Food Safety for Supervisors certification – Highly regarded.
  • Certificate IV in Training and Assessment – Highly regarded.
  • Knowledge or understanding of Defence Force operations, systems and functions – Highly regarded.
  • Excellent verbal and written communication skills.
  • Strong organisational skills and proven experience in collaborative and consultative processes at a professional level.
  • Demonstrated interpersonal communication skills and the ability to lead a large team.
  • Ability to work flexibly and adaptively in a complex environment with multiple stakeholders.
