La Renaissance is Sydney's oldest family-run patisserie and sets a high standard for the art of pâtisserie and viennoiserie here in Sydney. Established in 1974, "La Ren" is beloved by locals and returning tourists as a haven for true French pastries, cakes & baguette sandwiches here in Australia. We use only the best local and imported ingredients and take great pride in our product and approach to this artisanal trade, under the helm of renowned pâtissier Jean-Michel Raynaud.
We are looking for a Grade 3 / 4 Pastry Chef to join our team for a full time position, with a minimum of three years' experience in a similar patisserie* and relevant trade certificate. This position willnotbe offered to any pastry students or new graduates.
You must be passionate about the art of French pâtisserie and love working in a team environment. We need someone with excellent communication skills, pristine work ethic and knowledge of all elements of pâtisserie, including:
- mousse
- biscuits / sponges
- cremeux
- ganache & other emulsions
- chocolate
- macarons
- tooling & machinery (blast freezer, commercial oven, robotcoupe, etc)
- flocage / cake spraying
- pâtes sucrée / salé (sweet & savoury pastry)
- entremets & petit gateaux
- cake decoration
We run a 5 day roster for our chefs (per week) including one day on the weekend. The position starts immediately.
