AddressEagle Bay Brewing Co are looking for an experienced and dynamic Head Chef and Sous Chef to take our kitchen in a new exciting direction, following the departure of our Head Chef of 14 years.
We are a family owned and operated brew-pub located on the family farm on the outskirts of WA’s beautiful coastal town of Dunsborough. We have a multifaceted venue with bright open spaces offering a casual and relaxed dining experience. We celebrate delicious high quality local food, led by the seasons and our kitchen garden.
We are open 7 days a week, 11am-4pm for lunch service. Hours are daytime with the occasional evening function. Working weekends and some public holidays is essential, though we do encourage a good work life balance for you and the team.
About the Roles
Our Head Chef will be a proactive, experienced leader with the ability to plan and create modern dishes. As this is a key leadership role, this person will have a calm manner, with the ability to successfully manage kitchen operations, while recognising the importance of growing and developing a high performing team. You will report to the General Manager and work closely with the management team (Hospitality, Marketing and Brewery)
Key responsibilities include:
• Promotes positive team culture and can-do attitude
• Guides and motivates the team and works collaboratively with FOH.
• Menu design, development, costing and management
• Prepare a variety of food including customer favourites and contemporary dishes. Evolving with seasonal produce.
• Ensures the quality of food is always consistent and reflects our brand and values.
• Producing a high volume of delicious food in a fast-paced environment
• Achieving KPI’s
• Checks the equipment is functional and any maintenance or safety hazards are reported immediately.
• Supervise and coordinate all food preparation for functions and events.
• Rostering to ensure wage costs are kept within budget.
• Trains and coordinates the team in food preparation and OH&S.
• Ensures the kitchen is clean and maintained above health and safety standards.
• Maintains an efficient stock ordering system and well managed stock control, that maintains a first in first out system.
The Sous Chef plays an integral role in supporting the Head Chef with their key responsibilities and managing the kitchen in the absence of the Head Chef.
Qualifications and Skills
• Degree, diploma in culinary arts or similar
• Minimum 3 years of experience in similar role
• A natural leader with excellent communication and interpersonal skills
• Ability to work under pressure in a calm manner and handle multiple tasks effectively
• Strong knowledge of food preparation methods and techniques
• Ability to use food costing and rostering software, like Restoke or Loaded.
