About the Role
We are looking for a dynamic and enthusiastic Junior Sous Chef. The role will report to the Executive Chef and is responsible for managing kitchen operations.
Duties & Responsibilities
Your duties will include:
- Training all staff on menu execution, techniques and HACCP.
- Communicating politely to display courtesy to all guests and internal customers.
- Assisting in menu planning, implementation and execution
- Controlling food and wage costs, ensuring they come in on budget.
- Assisting in special event planning and execution: i.e. guest chef dinners, Christmas and New Year's Eve menus.
- Maintaining the kitchen in proper working order and where required, upgrade of equipment.
- Assisting to change menus regularly for the benefit of regular return guests.
- Establishing and maintaining effective employee working relationships.
- Implementing the hotel and department regulations, policies and procedures.
Skills & Experience
Your skills and experience will include:
- Demonstrated experience in a similar role within a fine dining environment.
- Experience catering for weddings and social events up to 200 people.
- Trade Qualifications.
- Sound knowledge of food trends.
- Previous experience in menu development and costing.
- Experience managing a team of 20 chefs.
- Knowledge of HACCP standards and procedures.
- A high standard of professional grooming.
- Excellent presentation and exceptional communication skills.
