Working under the Executive Chef and Senior Sous Chef in a fast paced venue, you will have a real passion for delivering a great food experience and a desire to grow and contribute.
Position Description:- Supporting Executive Chef and Sous Chef in all areas of food production, preparation, and ordering food/kitchen supplies.
- Managing a team (approx 3-4) of line cooks across three cooking sections.
- Ensuring effective communication and team work within the kitchen.
- Preparing and cooking quality dishes, carrying-out mise-en-place as required.
- Preparing daily stock requirements and managing stock levels, utilisation and rotation.
- Contributing to the development of new menu ideas, including, but not limited to menu and labour costing of new items.
- Demonstrating knife techniques such as chopping, cutting, slicing, dicing and trimming.
- Liaising with other staff ie kitchen-hands, cooks, wait staff, duty managers
- Maintaining and implementing excellent workplace health & safety. measures, and food preservation systems/methods.
- Provide supervision and training of apprentices and other kitchen staff.
- Attend all statutory and club-specific training as directed.
- A trade qualification (minimum Diploma level).
- Experience delivering quality food standards in a fast paced service environment.
- The experience to model an example of excellence for others to follow.
- A willingness to contribute to the creative process of menu planning & daily specials.
- Experience working within the pressures of a high volume restaurant and/or coffeeshop desirable.
- Demonstrated understanding of food safety & hygiene practices.
- Monitor and manage food inventory and supplies.
- Provide supervison and training of apprentices, trainees and junior chefs/cooks.
- Flexibility to work weekdays and nights and weekends.
