Dining at qualia’s restaurants, The Beach Pavilion and hatted Pebble Beach is a true luxury experience. Pebble Beach’s superb location offers a sweeping beach panorama, where encircling islands can be admired from tables on a wide deck, elegantly set with white napery and candles. 

In the laidback luxury of The Long Pavilion, simply prepared, fresh dishes are served with breathtaking views across the Whitsundays. 

Weddings, cocktail parties, and arts events are ever popular in these uniquely stunning spaces.

An opportunity now exists for a Restaurant Manager to lead our front of house team and to work closely with our Executive Chef to create memorable dining experiences for our discerning guests.

About the role:
Reporting directly to the Food & Beverage Manager you will be responsible for the day-to-day operation of Pebble Beach and The Long Pavilion restaurants, working closely to ensure both venues meet financial, operational, legislative and service aims while maintaining the highest levels of guest service. This includes, but is not limited to:

  • Coordinating service and production with the kitchen, stewarding and bars to achieve a consistently high standard of service and product thus ensuring high levels of guest satisfaction
  • Providing impeccable service to meet the expectations of our guests
  • Managing all booking and guest requests
  • Overseeing floor service ensuring it is to a fine dining standard, while still relaxed and intuitive 
  • Staff recruitment supported by the Hamilton Island recruitment team
  • Staff management including training and development, mentoring and discipline and performance reviews.

  • Rostering, planning and event management
  • Cost control, budgets, labour costs, wastage and stock control
  • Ensuring financial transactions are performed in accordance with HIE policy and any discrepancies reported.
  • Security, cleanliness and hygiene of the premises

You are passionate about developing your team and have excellent communication skills at all levels.

You will also have:

  • Impeccable grooming and presentation
  • Excellent time management skills & ability to adapt and& personalise guest experiences
  • Previous management experience in a la carte fine dining and tasting menus
  • WSET/Sommelier accreditation (highly desirable) – please attach to application
  • Flair for service and superior communications skills
  • Ability to remain calm under pressure and great problem solving skills
  • Use initiative and proactive and positive attitude to assist team members to ensure operations run smoothly
  • Reliability and flexibility in terms of shifts and rosters
  • Dedicated to stay minimum of 12 months and& passionate about progressing in career
  • Computer skills including Microsoft Office
  • Driver’s license (Essential)
  • Nationally Recognised Statement of Attainment for Responsible Service of Alcohol
  • Luxury Lodge, Michelin Star or Hatted Restaurant experience (Desirable)
  • Diploma of Hospitality Management or equivalent (Desirable)
  • Certificate IV in Assessment & Workplace Training or equivalent (Desirable)
  • International experience (Desirable)
