Job description

The Langham Hotel Melbourne is currently looking for a full-time Sous Chef Banquetsto join our team.

You will be assist for the hands on cooking, supervision and coordination of the activities in our kitchen alongside the Senior Chefs and Executive Chef. The Sous Chef will ensure meals are delivered of a high standard to all of our guests, whilst achieving departmental goals and KPI's.

This is an exciting opportunity for an experienced Sous Chef to join our team.  You will have direct accountability for the department, and will have a proven track record in effectively managing a team.

Applicant must be well-versed in buffet as well as innovative plate presentations for large functions. The ability to execute multiple events at the same time are necessary strengths.

You must hold a Food handling certificate

Previous experience in a fast paced working environment will also be highly regarded, along with demonstrated experience in large volume production cooking.
 

Your responsibilities will include:

  • Responsible for providing a high quality of food to our guests
  • In conjunction with the Executive Chef, create and suggest menu design for your area
  • Responsible for training and supervision of all colleagues within your team
  • Maintain the budgeted food cost percentage as set down by the Executive Chef and The Langham, Melbourne management team
  • Monitor the daily quality of all food products to The Langham, Melbourne specifications through Total Quality Management.  Assist and monitor all orders placed through the purchasing department.
  • Ensure that the culinary department maintains the standards set by the City and State Health Department Codes and The Langham, Melbourne management
  • Display knowledge of and follow procedures in sanitation and sanitary food handling according to The Langham Melbourne's Food Safety Program
  • Establish and maintain effective employee relations for example; listening skills, problem solving, counselling techniques and time management
  • Monitor profit and loss reports with individual chefs to ensure outlet accountability

For this role, your attributes will be inclusive of the following:

  • Experience in a five star hotel kitchen environment
  • Effective staff management including rostering, training and development and mentoring
  • The ability to work well in a team
  • Self-motivation and ability to work autonomously
  • Able to work in a busy, fast paced work environment 
  • Familiar with and able to work across all sections within a commercial kitchen 
  • Experience in menu planning and food costing
  • Experience in ordering and stock take
  • High standards of professional presentation
  • Available to work a variety of shifts inclusive of morning, afternoon and evening
  • Available to work across a seven day rotating roster
