About the Role
We are looking for a Sous Chef Pastry to join our world-class culinary brigade who thrive on a positive team culture and innovation. Working closely with our leadership team, you will supervise and manage our Pastry operation, ensuring the smooth running of day-to-day operation. You will:
- Effectively lead and oversee team management within the Pastry kitchen;
- Deliver a high standard of preparation for all of our events, and be able to manage and facilitate several sections simultaneously;
- Plan, coordinate and manage pastry production schedules, efficient rostering and food preparation at our world-class standards;
- Ensure strict food safety standards, preparation, presentation and cooking techniques are established and monitored to meet ICC Sydney Brand Standard guidelines and maintained at that level;
- Embrace our Feeding Your Performance philosophy with a focus on fresh, seasonal and local artisan produce;
- Effectively manage the day-to-day operation of the Pastry kitchen with have basic knowledge of food cost, portion control, labour cost, productivity, and wastage.
