Multi award winning Gambaro Hospitality Group is looking for a Chef de Cuisine to oversee our Persone Italian Restaurant and Black Hide Treasury Steakhouse Restaurant, before being part of the opening of Brisbane’s newest venue which will be located at the new Casino on Queen Street Wharf.
The Role:
The Chef de Cuisine is responsible for overseeing all culinary activities in the kitchen, ensuring the highest quality of food, presentation, and service, whilst still being hands-on in the kitchen. They are also responsible for creating and updating menus, managing kitchen staff, and maintaining a safe and sanitary work environment.
Tasks & Responsibilities:
- Oversee all kitchen operations, including food preparation, cooking, and presentation
- Create and update menus, incorporating seasonal and local ingredients
- Building relationships with suppliers
- Monitoring labour costs
- Manage and train kitchen staff, including chefs, cooks, and assistants
- Ensure all food safety and sanitation regulations are followed
- Monitor food costs and manage inventory
- Collaborate with restaurant management to plan and execute special events and promotions
- Maintain a positive and professional approach with co-workers and customers
- Stay updated with industry trends and culinary techniques
Skills & Attributes:
- Culinary degree or equivalent experience
- Proven experience as a Chef de Cuisine or Head Chef
- Previous experience opening a new venue
- Strong leadership and communication skills
- Excellent knowledge of food safety and sanitisation regulations
- Creativity and ability to create innovative and appealing menus
- Previous hatted A La Carte experience and large volume functions/banquets is advantageous
- Strong organisational and time management skills
- Fast-paced kitchen environment
