Is this role right for you?
An exciting opportunity for an inspired Chef De Cuisine (CDC) to assist our Executive Chef to lead our commercial kitchen team. We are looking for a skilled chef and foodie who can demonstrate both flair and innovation by using the best seasonal local produce Victoria has to offer as well as strong leadership skills.
A day in the life
You’ll set the standards by displaying a real passion and enthusiasm for hospitality and service to deliver an exceptional food experience to our guests and members. You'll assist in leading a team of chefs to execute breakfast, lunch and dinner services as well as assist overseeing multiple outlets, menu creation, ordering of stock and rostering of team in a 5* Resort Environment.
We’re looking for:
- Experience in a similar role, ideally working in a fast-paced 4-5* resort or premium A La Carte venue
- Strong understanding of sequence of service, the seasonality of ingredients and COGs
- An understanding of competitor analysis, culinary trends and the local produce market
- Hands-on leadership skills with ability to develop and inspire a team from both a professional and personal standpoint
- The ability to manage operations across multiple outlets as needed
- Strong knowledge of budgeting and accounting procedures including planning, forecasting and controlling
- A passion for cuisine with a strong focus on presentation and locally sourced produce
- The flexibility to work across a weekends and peak holiday periods.
