Is this role right for you? 

An exciting opportunity for an inspired Chef De Cuisine (CDC) to assist our Executive Chef to lead our commercial kitchen team. We are looking for a skilled chef and foodie who can demonstrate both flair and innovation by using the best seasonal local produce Victoria has to offer as well as strong leadership skills.

A day in the life 

You’ll set the standards by displaying a real passion and enthusiasm for hospitality and service to deliver an exceptional food experience to our guests and members. You'll assist in leading a team of chefs to execute breakfast, lunch and dinner services as well as assist overseeing multiple outlets, menu creation, ordering of stock and rostering of team in a 5* Resort Environment.

We’re looking for:

  • Experience in a similar role, ideally working in a fast-paced 4-5* resort or premium A La Carte venue
  • Strong understanding of sequence of service, the seasonality of ingredients and COGs
  • An understanding of competitor analysis, culinary trends and the local produce market
  • Hands-on leadership skills with ability to develop and inspire a team from both a professional and personal standpoint
  • The ability to manage operations across multiple outlets as needed
  • Strong knowledge of budgeting and accounting procedures including planning, forecasting and controlling
  • A passion for cuisine with a strong focus on presentation and locally sourced produce
  • The flexibility to work across a weekends and peak holiday periods.
