Award winning Gold Coast restaurant, Moo Moo (Gold Coast) Pty Ltd (T/A ‘Moo Moo The Wine Bar & Grill Gold Coast’) is seeking a qualified and experienced Chef de Partie. Assisting the Executive Chef and senior chefs, applicants must be confident in their abilities to perform duties within the kitchen team including crafting specialty food, creating new menus, dealing with large volumes of food at a fast pace and possess a strong understanding of fine dining.
The salary offered is $73,150 - $78,000 per annum plus superannuation.
The key responsibilities and duties are:
- Planning and executing menu developments to produce high quality dishes and ensuring adequate supplies are available for expected service.
- Executing preparation and food service focusing on freshness, quality, and portion sizes.
- Demonstrating cooking techniques and delivering training to junior staff.
- Monitoring quality of dishes at all stages of preparation and presentation.
- Checking and monitoring inventory and placing orders from suppliers to ensure inventory is kept stocked according to the planned menus.
- Ensuring all food ingredients are prepared and stored as per industry food preparation guidelines.
- Maintaining food preparation handling and correct storage standards.
The candidate must possess the following skills and qualifications:
- Certificate IV in Commercial Cookery/Diploma of Hospitality Management
- Minimum 2 years of full-time experience gained in a similar position
