We need a qualified chef to join our hospitality team on a tropical island paradise off the coast of Central Queensland. Become part of our rapidly growing resort operation.
Job Description:
The beachfront bar and bistro dining area accommodates groups of up to 200 with buffet, a la carte and parilla options in addition to traditional service for our in-house guests, day visitors, corporate functions and weddings.
The ideal candidate will have 3+ years industry experience, ideally in a resort setting and with an international theme to complement our focus on seasonal and local produce.
Full commercial kitchen and support staff/apprentices. This is a full-time position (38hrs per week). Early mornings, evenings, weekends and public holiday work will be required.
Duties
Managing your section, ensuring your section is prepped and ready for trade.
Supervision of your section staff and providing appropriate training to apprentices/cooks.
Assisting Senior chefs with overall kitchen operations and supervision of subordinate kitchen staff.
Reporting to Senior Chefs about any issues recognised within the kitchen.
Assisting senior chefs with menu design, daily and weekly specials.
Preparing raw ingredients according to menu requirements, including marinating and seasoning.
Cook dishes for buffet and a la carte guests under the direction of the Head Chef.
Manage time and techniques to cater to large private and corporate functions
Accommodate the dietary requirements and specific requests of customers, including vegetarian, gluten-free options .
Portioning and plating of meals, including garnishing and sauces.
Comply with all food safety requirements, including the regulation of temperature in grills, ovens and fridges.
Store and monitor food freshness, in temperature controlled environments

Salary in the range of $60,000 to $70,000 per annum depending on skills and experience.
Superannuation 9.5% of salary to your nominated account.
