About the Role
We are looking for an experienced Chef de Partie to join our team in a full time position.
The role would suit someone who has had previous experience working in a pub, restaurant or hotel environment and has experience in a high-pressure kitchen doing a large number of covers.
Responsibilities and Main duties:
- The preparation, cooking, and service of meals.
- Operate commercial cooking equipment, including, but not limited to, fryers, ovens and stoves.
- Delegation of tasks to Back of House staff and Apprentices, including, but not limited to, cleaning schedules, prep and service tasks.
- Assist the Head Chef and the Sous Chef with the management of immediate rosters, with consideration for bookings, forecasts, shift swaps, clocking on/off and absences.
- Assist the Head Chef and Sous Chef with the ordering, receiving and storage of stock and supplies.
- Assist the Head Chef and Sous Chef with menu and specials development, including sourcing supplies and costings.
- Working with management to ensure the effective operation and the delivery of a quality product at The Broadway.
- Ensuring a safe and compliant environment for the restaurant staff and customers.
- Compliance to the Food and Safety Program; including but not limited to; accurate temperature logs, accurate delivery logs, maintenance documentation, adherence to cleaning schedules and development of any additional materials to ensure a high standard is developed and maintained.
- Ensure all work is carried out in accordance with the obligations detailed in the Workplace Health & Safety Act & Regulations.
- Performing administration tasks when required.
- The specific role may vary throughout a shift, on an as needs basis.
Qualifications
- You have a Certificate III or IV in Commercial Cookery
- Current Senior First Aid certificate (or willingness to obtain).
Main Skills and Experience:
- Minimum 2 years’ experience in a similar role
- Ability to work across all sections, including:
- Pass - check of all meals prior to being served to the customer.
- Pasta - assemble and prepare ingredients for of all pasta and risotto meals.
- Larder - assemble and prepare ingredients for all items notrequiring cooking, eg. salads, desserts.
- Grill - assemble and prepare ingredients for all other cooked items.
- Exceptional organisational and time management skills, with great attention to detail
- Vibrant personality, professional and always well-presented
- A positive ‘can do’ attitude and the ability to work within a team environment.
- You will have the ability to work under pressure and to tight deadlines.
- Experience in stock control, ordering & menu planning, and knowledge of quality management systems.
- HACCP compliance, food safety procedures and OH&S regulations
- Willingness to work across lunch and dinner shifts, including on weekends
- Excellent communication and organizational skills
- Excellent knowledge of all kitchen procedures and operations
