Reporting directly to the Executive Chef, you will be responsible for the efficient and the smooth operation of the kitchen and the services you are involved in.

About the Menu
Combining experimental principles with traditional Northern European practices, the menu will be a balance between adventurous and classic dishes but will always stay true to the ethos of locally sourced ingredients and simplicity.
Main Responsibilities
- Collaborating with the team on menu planning, recipe creation, writing tasting notes, training, and implementation
- Ensuring quality and consistent food preparation and cooking
- Assisting with the management of health and safety
- Assisting with the management of food hygiene practices
- Managing and training any Demi Chef and Commis Chefs
- Memorise and utilise our serving portion sizes and all meal preparation procedures used in the kitchen
- Ensure that the kitchen, all food preparation areas and all food storage areas meet restaurant cleaning standards
- Monitor product freshness and rotate out old product based on a schedule created by the restaurant
- Overseeing the maintenance of kitchen and food safety standards
- Cost control in alignment with budget expectations
Key Selection & Criteria
The ideal candidate will be a hands-on chef and should possess some of the following essential key experiences and qualifications:
- Demonstrate a genuine passion for food and beverage, and drive to succeed in a culinary/hospitality career
- Minimum 2 years previous experience in a similar role, ideally in a premium restaurant
- Formal cooking qualification (minimum certificate 3 in commercial cookery)
- Overseas training/experience in similar concept and environment highly regarded
- Sound knowledge of Food Safety Standards, relevant legislation and statutory obligations
- Understanding of raw materials, quality control and other techniques for the effective creation and distribution of food products and cooking procedures
- Analyse recipes and keep up with industry trends, plan and create new recipes in collaboration with the Executive Chef
- Inspect cooking equipment, supplies, work areas and ingredients to ensure constant conformance to regulatory standards
- Available to work varied shifts, including late evenings, weekends and public holidays
- Cope well under pressure and have the capacity to multi-task
- A can-do attitude with a strong work ethic and willing to go the extra
