The Position
Reporting to the Head Chef, this hands on Chef De Partie role is based in our Cantonese Restaurant - Grand Orient and is primarily responsible for the working at the wok section of the Chinese kitchen as well as supporting the Head Chef in the day to day activities.
Whilst technical ability is key to achieving success in the role, passion for the Cantonese cuisine and your craft is equally paramount. With guidance from the Head Chef you will be customer focused, have knowledge and experience preparing Cantonese cuisine and be motivated to exceed guest expectations at all times.
Skills & Experience:
- Extensive experience with a minimum of five (3) years relevant experience.
- Background in hot and cold Chinese menu preparation, preferably Cantonese.
- Highly developed communication skills with empathy toward inspiring a positive kitchen culture
- Excellent culinary skills
- A true passion and love of cooking and using local produce
- Ability to participate in developing and implementing inspiring menu's
- Be able to speak and communicate in Cantonese is an advantage.
Responsibilities include:
- Assist and support the kitchen brigade in the day to day activities within the operation.
- Based at the wok section of the kitchen, be hands on in the preparation and delivery of quality Cantonese food during both lunch and dinner service periods.
- Provide support and input during menu planning stages and special events.
- Assist in analysing seasonal changes, adjusting menu's, assist in managing an effective food cost.
- Have a solid understanding of Chinese cuisine concepts and be flexible with changes to menus.
- Be able to prepare and serve menu items to the highest standard consistently for both lunch and dinner meal period.
- Maintain effect working relationships with all team members.
- Be able to maintain effective communication with all team members within the hotel operation.
- Maintaining hygiene, health, safety, cleanliness and environmental standards as per relevant hotel policies and government regulations.
- Engage and participate in team building initiatives.
