About the role:
We are in search of a highly skilled and seasoned Executive Chef with outstanding leadership and communication skills to lead to our kitchen brigade.
Key Responsibilities
Drive kitchen KPIs, supporting and nurturing a substantial kitchen team of 30+, overseeing daily kitchen operations, ensuring customer satisfaction, leading recruitment and onboarding, handling rostering, ordering, maintaining kitchen hygiene, WH&S compliance, and contributing to the successful execution of functions, conferences and events both on and off site.

Key Aspects
- Previous experience in a busy à la carte kitchen, serving up to 300-400 + meals per lunch/dinner service on weekends and Public holidays.
- Prior experience as a Head Chef or Sous Chef in a bustling hotel, pub, or restaurant is highly desirable.
- Demonstrate a confident and creative cooking style placing a strong emphasis on quality and presentation across a spectrum of casual, corporate and premium offerings.
- Implement strategies to enhance productivity and sales, control operational costs and identify measures to reduce waste by effective menu planning.
- Ensure the consistent delivery of high quality and flavorful food in alignment with Haus Restaurant service standards whilst efficiently managing food costs.
- Manage and oversee stock ordering and controlling costs of goods.
- Drive effective recruitment and onboarding, participating in all application and screening processes.
- Exercise control of wages through effective rostering and daily payroll management
- Actively promote team retention and development through effective training, succession planning and up-skilling.
- Develop and implement SOP's for streamlined operations.
- Lead a large team of qualified Chefs, Cooks, Apprentices & Kitchen Hands, adapting management styles and conducting ongoing appraisals to team development.
- Lead by example and collaborate effectively within a multi-cultural and fast paced environment.
- Adhere diligently to local regulations concerning health, safety and other compliance requirements.
- Maximize revenue opportunities through collaboration with local businesses, community and events.
What we are looking for:
- Previous experience in an Sous Chef, Head Chef or Executive Chef role in a busy hotel or multifaceted kitchen operation.
- 3-5 years experience in similar operations, including a la carte, conferences, events including offsite catering.
- The preferred candidate should possess full availability, given the venue's operation over seven days a week, covering breakfast, lunch, and dinner. This commitment extends to working during school holidays, weekends, public holidays and special occasions.
- Strong business acumen with the ability to manage food and labor costs effectively
