As our Head Chef, you will be behind our pub's culinary offerings, responsible for creating menus that tantalise taste buds and keep guests coming back for more. You'll lead a team of passionate cooks and kitchen staff, fostering a collaborative and energetic work environment where creativity flourishes. As our Sous Chef, you'll be the right hand to our Head Chef, collaborating closely to execute our culinary vision with precision and passion. You'll assist in menu development, oversee day-to-day kitchen operations, and mentor our kitchen staff to ensure that every dish reflects the The Commonwealth Hotel's standard of excellence.
Key Responsibilities of Head Chef
- Developing innovative and crave-worthy menus that showcase the best of pub cuisine, from classic comfort foods to contemporary twists on traditional favourites.
- Leading kitchen operations with precision and flair, ensuring that every dish meets our high standards for quality, presentation, and taste.
- Mentoring and coaching kitchen staff to hone their culinary skills and uphold our commitment to excellence in food preparation and service.
- Managing inventory, controlling food costs, and maximising efficiency in the kitchen to meet financial targets.
- Upholding food safety standards and sanitation guidelines to ensure a clean and safe working environment for all staff.
Key Responsibilities of Sous Chef
- Assisting the Head Chef in menu planning and development, offering creative input and culinary expertise to enhance our offerings.
- Overseeing kitchen operations during service, coordinating with kitchen staff to ensure smooth execution and timely delivery of dishes.
- Training and mentoring kitchen team members, providing guidance and support to help them grow and excel in their roles.
- Collaborating with the Head Chef to maintain inventory levels, manage food costs, and implement strategies for operational improvement.
Qualifications of both:
- Proven experience as a Head Chef, Executive Chef, or Sous Chef in a fast-paced pub or gastropub setting.
- Deep knowledge of pub cuisine, including classic dishes, regional specialties, and creative takes on pub favourites.
- Strong leadership skills with the ability to inspire and motivate a team to deliver top-notch culinary experiences.
- Exceptional organisational abilities and attention to detail, with a knack for balancing creativity with operational efficiency.
- Culinary degrees or certification is preferred but equivalent experience will be considered. Must be willing to undertake food safety training.
