The RoleIn this Full Time Seasonal position as the Head Chef, you will be responsible for the food and dining experience, overseeing smooth kitchen operations at our Carmichael’s Restaurant, Under the Desert Moon experience, and the Bruce Munro Light Towers F&B offerings. Your role includes ensuring an efficient and cost-effective food service, balanced with the use of high-quality, local produce. This position involves curating an exceptional fine dining experience.
Duties- Leading a kitchen team
- Preparation and cooking of all dishes
- Experience on pans, grills and fryers
- Checking quality of raw materials and weighing ingredients
- Work effectively within a team environment
- Stock control and monitoring wastage
- Follow a high standard of food safety and hygiene practices
- Supplier liaison
- Ensuring safe work practices with focus on workplace health and safety
- Managing, rostering and training kitchen staff
- Previous experience managing a kitchen as a Head Chef
- Previous experience and cooking in fine dining outlets
- Formal trade qualifications in commercial cooking or equivalent experience
- Excellent communication skills
- Strong experience leading and mentoring a team
- Demonstrated track record meeting financial targets for food and labour costs
- Ability to prep and organise ahead
- Current First Aid Certificate is highly desirable
- HACCP experience essential, with a high emphasis on food hygiene
- Current Drivers License.
