The Old Synagogue | Tonic + Ginger in Fremantle, is seeking an experienced Head Chef to lead an accomplished team and take over the reins of this thriving hospitality business.
The Old Synagogue has four themed venues under one incredible roof, with one kitchen offering multiple cuisines to service them all. Open for Breakfast, Lunch and Dinner - 7 days a week with a venue to suit everyone.
The venue has built to a consistent 2,000 covers a week with a strong focus on quality, consistency & impeccable service culture.
Tonic + Ginger is the flagship modern Asian restaurant, showcasing big & bold favours that are always balanced to perfection, T+G boasts an extensive menu with signature dishes that have become firm favourites - if you haven't tried our Firecracker Cauliflower with bang bang sauce you are missing out!

The Arbor offers more traditional pub fare from burgers, pizzas, steaks, share options and Mr Chapple & L'Chaim serving a reduced version of the menu.
A bit about YOU - Key skill requirements;
- Minimum 2 years’ experience as Head Chef (or above) in a fast paced, high-volume kitchen with experience managing all aspects of BOH operations
- From ordering, invoicing, receivables, suppliers’ negotiations & product
- Follows HACCP requirements with regards to food handling, health & safety and storage and ensures compliance across the whole venue
- Ability to manage labour & wage control – rostering & recruitment of kitchen team.
- Asian fusion or Asian cooking experience highly regarded.
- Cook the books knowledge advantageous
- Strong communication & organisation skills
- Competent in Microsoft office skills
- Drive customer satisfaction by delivering an exceptional and consistent food product
- Develop, manage and empower an engaged team, creating a great environment to attract and retain awesome local talent – be a mentor.
- Develop seasonal menus, activations and events packages
- Demonstrate a hands-on, inspirational leadership style across all service areas and shifts
- Effectively collaborate, communicate and coordinate with venue management and work collaboratively with all areas of the business - including Functions & Events, Marketing and Finance
- A high level of business, management and financial acumen with a commitment to achieving KPIs, managing budgets, and implementing cost-effective and revenue focussed strategies
