We are seeking a dedicated and experienced Hygiene Managerto join our team of dedicated individuals at Shangri-La, The Marina Cairns.
The Hotel
Shangri-La The Marina, Cairns is a luxury five-star hotel located beside Marlin Marina and Trinity Inlet in the heart of Cairns. With 255 guest rooms, 19 function venues and extensive food-and-beverage facilities, the property is part of a leading international company with more than 100 hotels and resorts worldwide.
The Role
In your role as the Hygiene Manager collaborating closely with the Culinary and Food & Beverage departments, you will play a vital role in ensuring that the highest standards of food safety, hygiene, and cleanliness are consistently upheld.
About you:
To be considered for this position, you must possess the following qualifications and skills:
- A minimum of 3 years within a role in food safety or a related field, such as Food Manufacturing Industry. (Hotel or F&B Industry experience is preferred)
- Tertiary qualifications in Food Safety or Food Science (preferred)
- The possession of recognized food safety auditing skills to conduct inspections and audits to ensure food safety compliance.
- Comprehensive knowledge of hygiene practices and occupational health and safety standards. (Kitchen/F&B management experience preferred).
- Possession of Train-the-Trainer skills or Industry Trainer Certification with at least a minimum of 3 years experience in providing food safety training (Preferred).
- Ability to demonstrate a comprehensive understanding of local hygiene regulations and the ability to strengthen food safety supervision.
- Possession of HACCP and/or ISO 22000 knowledge, including an understanding of system requirements, or the capability to contribute to obtaining these certifications (HACCP/ISO22000 external auditor certification preferred).
- Knowledge of ISO 14001 / OHSAS 18001 and EHS implementation (Preferred).
- Familiarity with current culinary trends and methods (Preferred).
- Proficiency with Microsoft Office programs (Microsoft Word, Excel, Outlook, PowerPoint etc.)
- Exceptional presentation and interpersonal abilities.
- Outstanding verbal and written communication skills
- Strong people management skills
- Capability of working independently, as well as in a team environment.
- The ability to work flexible hours, including shifts, weekends, and public holidays.
