The Client
Publique Bakery is a reputable and established bakery located in Preston, Victoria. They are currently looking for an experienced Pastry Cook to join their team.
The Role
This is a full time position with an annual salary of $70,000 to 80,000 plus superannuation.
Responsibilities
Some of the duties and tasks will include:
Ensure equipment and workspace are clean and meet health and safety standards to prevent contamination
Inspect quality of raw materials and discard any that do not meet standards
Accurately weigh and measure ingredients according to recipe requirements
Knead, mature, cut, mould, mix, and shape dough and pastry for a variety of goods
Prepare a range of fillings for pastries that complement the dough
Monitor oven temperatures and appearance of items to determine correct baking times
Coordinate forming, loading, baking, unloading, de-panning, and cooling of batches
Glaze buns and pastries, and decorating with cream and icing
Operate machinery for rolling, moulding dough, and cutting biscuits
Regularly empty, clean, and grease baking trays, tins, and other equipment
Experiment with new recipes and tweak existing ones to create unique pastry products
Keep a detailed inventory of supplies and ingredients, restocking as necessary
Stay updated with and adhere to the latest food safety guidelines and regulations
Collaborate with kitchen staff and assist in training new or less experienced pastry cooks
Requirements
Must have relevant qualification in Baking or Patisserie
Experience as a professional Baker with at least 3 years experience as a Pastry Cook in a commercial bakery
Must have at least 3 years of experience in baking French pastries
Effective English and good communication skills

Ability to work a 7 day rotating roster
