The Venue
Tommy's Italian is all about sharing good food, a few laughs and a drink or two with friends and family. Headed up by Francesco Anghileri, Tommy's menu is made for sharing.
Start with wood-fired bread made to order with small plates of local and house-made antipasto. Enjoy our fresh pasta, from a beautiful paccheri arrabbiata with local stracciatella to a slow cooked lamb ragu pappardelle topped with lots of pecorino because we just love pecorino!
We are also serving cooked to perfection Neapolitan style pizza using an Italian style pre-fermentation called Biga. Our dough is fermented from 48 to 72h and has a much better aroma and flavour than normal pizza. Easier to digest to!
The Role
A rare opportunity has become available to join Tommy's Italian as a Restaurant Manager.
We are looking for someone driven and motivated, focused on driving business performance, who can build, develop and lead a high-performing team, and most importantly someone who has a passion for creating memorable guest experience that are second to none.
Assisting the owners to successfully operate the venue, you will be exposed to all facets of the business in a hands-on role which combines both front of house and administration duties.
The key deliverables of the role include:
- Have a strong focus on delivering high standards and exceptional product.
- Lead from the front, ensuring your team understand what exceptional looks like every day.
- Hands-on and operational.
- Understand and own your financials. Be a numbers person and challenge revenue-driving opportunities.
- Develop the skills of the staff around product knowledge, service skills, team culture and guest relationships.
- Develop, plan and design menus in consultation with head chef.
- Planning and organising small and large functions.
- Purchasing and pricing of goods according to budget set by directors.
- Maintaining stock levels and relevant financial transactions.
- Ensure compliance with health and safety regulations and maintain a clean and organised environment.
- Build and maintain relationships with customers, suppliers, and other stakeholders.
- Select, train, supervise and mentor staff to maintain high standards of service and professionalism.
- Take reservations, greet guests and assist in taking orders from time to time.
- Managing day-to-day operations with sophistication and passion.
The Offer
An attractive salary package will be negotiated with the successful candidate based on experience and skills, in the range of $70-80k plus superannuation and the opportunity to be included in the company bonus scheme based on achieving agreed KPI targets.
