Tasks & responsibilities
Sous Chef
- Directs food preparation and collaborates with executive chef and Chef de Cuisine.
- Work with the Executive Chef and Kitchen team to construct menus keeping in line with current trends and existing cost structures
- Produces high quality meals, including both design and taste.
- Oversees and supervises kitchen staff.
- Assist with stock ordering, inventory, and management of supplies.
- Ensure kitchen and equipment is clean and the food safety records are maintained.
- Keeps stations clean and complies with food safety standards.
- Offers suggestions and creative ideas that can improve upon the kitchen’s performance.
- Assists Executive Chef and Chef de cuisine in maintaining agreed cost structures and budget
- Trains new employees.
- Solves problems that arise and fosters a healthy culture among kitchen staff and between kitchen and front of house
DEMI CHEF
- Ensure the quality of food served is to the agree standard
- Hygiene control – Cleaning Schedule. Ensure that all records both food safety and cleaning are maintained, and all cleaning responsibilities are carried out
- Be responsible for stocks and control of wastage, in according to company standards.
- Assist in maintaining and improving upon budgeted food cost
- Assist the Sous Chef and Head Chef in the fulfilment of their duties in order to ensure the smooth running of the kitchen.
- Be responsible for the ordering of all fresh produce and dry goods in your section
Qualifications & Experience
- Fully qualified (cert 3 Hospitality)
- Food Safety Supervisor
- Minimum 3 yrs. experience with minimum 12 months in as Sous/Demi Chef/Cook as applicable.
- Proven track record of work autonomously and as a productive team member.
- Demonstrated experience in fostering a positive and efficient team culture both within the kitchen and Front of house.
