The Role
As the TCLH Catering Manager & Executive Chef, you will be a key contributor to our remote managed and mobile camp sites catering operations, overseeing all food and catering aspects from our head office. This strategic position demands a seasoned professional with a strong culinary background, excellent leadership skills and the ability to seamlessly collaborate with on-site teams.
Your mission: Ensure the delivery of our “Rockstar Service” across our managed and remote mobile camp sites. The Catering Manager will play a pivotal role in maintaining high food and hygiene standards, overall cost and budget management, fostering innovation and supporting on-site teams.
This role is a dynamic blend of autonomy and teamwork, collaborating directly with Camp & Village Managers, Field Operations Managers, and the Project Manager.
- Client, stakeholder and supplier liaison, including project planning and operational set up to deliver successful mobilisations and demobilisations of projects and facilities, across our camps business.
- Work co-operatively with the operations and kitchen teams daily, provide strong leadership and guidance
- Develop marketing material to support concepts, promotions and all forms of consumer engagement
- Work with our executive leadership team team to build, test and develop new menus, including research and development initiatives.
- Mentoring and guiding our team of chefs, catering and camp staff where possible
- Consistently re-evaluate working practices in terms of efficiency, innovation and cost cutting procedures and seek out and implement new practices where required
This role is a fixed contract and will be based from our Head Office in Bundall, Gold Coast. Successful applicant must be willing to travel both intrastate and interstate to remote sites as required.
Essential Criteria
- Certificate IV in Commercial Cookery or above
- Current Food Safety Supervisor Certificate
- Demonstrated experience in a Head Chef/ Executive Chef position
- Experience in fine dining, hotels or banquets will be beneficial
- Experience in remote camp or FIFO setting is advantageous
- Proficient in HACCP and other quality standards
- At least 3 years’ experience in similar role
- Exceptional interpersonal communication and strong people skills
- Current National Police Clearance valid within 6 months
- Ability to pass Pre-Employment Medical to allow for site visits
- Ability to pass Drug & Alcohol Screening to allow for site visits
