About the role
An exciting opportunity has become available for an experienced and enthusiastic individual to join our Hospitality Team.
As the Chef at BCAC, you will ensure all the prescribed food safety standards, guidelines and regulations are met in regard to food storage and handling, infection control and cleanliness in the kitchen and associated areas. Be responsible for the management and leadership of the hospitality team.
A challenging role where you can impact the food experiences our residents enjoy, with the responsible for delivering high quality meals that are nourishing, met dietary requirements and provide diverse choices for our residents.
Duties and responsibilities:
- Responsible for the resident overall food experience and strive to achieve a 5-star rating through continuous improvement and customer feedback
- Responsible for Food Safety Plan (HACCP) in accordance with the NSW Food Authority requirements.
- Ensure the Food Audits (internal and external) and Inspections maintain the business accreditation and legislative requirements
- Overall responsibility and supervision of all kitchen and servery employees, providing mentoring, coaching, instructions, training and performance management.
- Responsible for the planning, ordering, preparation and cooking of all meals.
- Ensure excellent food standards and compliance are consistently maintained at all times.
- Receive food, check quality, monitor temperature where applicable and store.
- Monitor storage of supplies checking that stock is rotated to ensure adherence to expiry dates
- Ensuring special needs for Textured Modified Food and Dementia Day Care Clients are met
- Manage the food budget and control food wastage
Skills you'll need to succeed
- Certificate IV Cookery or equivalent
- Minimum of 2-year experience in a similar leadership role is needed to perform this role successfully
- Current Food Safety Supervisor Certificate.
- Experience working in fast past kitchen environment or working in an Aged Care Facility Kitchen
- Current knowledge of Food Handling Legislative including HACCP requirements.
- Awareness of WH&S Legislation and Manual Handling procedure
- Excellent verbal and written communication, interpersonal and customer service skills.
- Excellent leadership, supervision and complaint resolution skills
- Ability to work as part of a team and demonstrations openness
- The ability to manage a demanding workload and a range or priorities while organising work schedules
