The Role:
Based on site in the Melbourne CBD, the Chef De Partie - Pastry is a vital role within the Culinary team.
The Chef De Partie - Pastry will be responsible for production hotel wide and given a lot of freedom to create and express themselves. Being a production based roll for main restaurant, events and Deli the right candidate will need to be confident, creative and able to work independently. While mainly a production role the pastry chefs presence will be expected for sepal groups, events or catering as per the Executive Chef or Chef De Cuisine.
The responsibilities are not limited to:
· Pastry production for a small operation hotel wide
· The creation of seasonal ALC, breakfast and events offerings in line with the hotels philosophy.
· Join service and plate up for events as required in regards to pastry
· Set, clear and reset designated working area and section
· Maintain a positive relationship between both back of house and front of house
· Follow all prescribed hotel policies and food safety standards
· Monitor and maintain the quality and quantity of all dishes to be served
