Position Purpose
This role will have a direct impact on driving the service and product standards of the business. Develop and nurture the talent of the team of Chefs and Kitchen Assistants and bring increased focus to performance, consistency and adherence to high standards as the business continues to grow.
As Head Chef (Savoury Section) you will be recruit, train, roster and manage all kitchen staff for our our Alexandriacafé and be responsible for the dine-inand takeaway menu of our savoury offerings.
Key Responsibilities
- Lead & coach a diverse team of people.
- Management of our cafe team.
- Developing new recipes as required.
- Ensure consistency of the Tuga savoury menu and execution of menu items.
- Expansion of the savoury offering
- Continued development and roll out of a range of Tuga chutneys, preserves, pickles and ferments
- Be sales focused, create and lead the team to execute revenue initiatives.
- Passion for product. Support the extraordinary team of chefs and guarantee you and your teams have a detailed knowledge of the product.
- Establish a healthy working environment for the team – enjoyable, educational, results focused and respectful.
- Ensure food quality, recipe consistency and service is to the highest standard.
- Ensure operational standards are met in terms of stock management, invoicing, cleaning, hygiene, repair and maintenance schedule.
- Support a vision for creativity and growth
Essential Knowledge and Experience
- Have previous experience in a similar leadership role as a Senior Chef
- Ideally Cert IV in Commercial Cookery or equivalent
- Demonstrated experience in sourcing, hiring, training and developing chefs and kitchen teams of all levels
- Ability to maintain professionalism under pressure
- Exceptional time management and a great eye for detail and quality control, understanding of HACCP controls and requirements
- A hands on leader
- Ability to work a flexible rotating roster including nights/ weekends if needed
