Italiani! Seeking Senior souus chef for new St Kilda restaurant

Ciao St Kilda! 

DOC Group is seeking a senior sous chef to take on a new role at our newest seaside venue, D.O.C St Kilda. We're looking for a passionate and energetic chef with a great understanding of Italian food and culture to manage daily operations and continue our showcase of fresh, authentic Italian food and service. 

Role remuneration is based equally on physical skills, time management, flavour understanding, your ability to communicate with the team, your past experience and your positive work ethic.  

About us:
D.O.C Group is, and has been, a Lygon Street institution since 1997. We have grown to a 7 Venue company across Carlton, Southbank and Mornington in Victoria and Surry Hills in Sydney. We’re expanding our group and we’re looking for great new additions to our team to continue our growth.

About the venue:

• Our 7th venue is our most ambitious yet! DOC is going all-in on an elevated service with a top-tier menu and service. 
• Our new St Kilda venue is located centrally on the Esplanade, right in the heart of St Kilda. 
• The menu will feature the best of Italian antipasto, pizza, pasta, secondi, contorni and dolci. 
• The service will centre on elevated casual dining, where a personable, intimate approach to premium hospitality is encouraged. 
• The facilities are new, and the equipment is state of the art. 

About the role:
Day-to-day operations will include:

• Leading their individual section or overseeing the pass during daily service, utilising strong time management and communication to coordinate with other sections of the kitchen. 
• Working in and managing various sections, including the pass, pans, pizza, fryer, and grill sections. 
• Maintaining overall responsibility for service and dish offerings. 
• Maintaining a clean and hygienic work environment by enforcing hygiene standards in the workplace. 
• Building an enthusiastic team and workplace morale. 
• Rostering by availability and skill set diversity. 
• Continued education and partaking in on-the-job training. 

About you:
We’re looking for a team member who is looking to grow as an individual within the company; key attributes we are looking for include:

• Displays clear time-management skills and 
• Holds relevant qualifications and can display clear industry education.
• Has advanced knowledge of all kitchen areas and can lead and manage others in the pass, pans, pizza, fryer, and grill sections. 
• An autonomous leader with great communication skills and a clear vision.  
• Has an interest in Italian culture, tradition, cuisine and provenance of food; experience living abroad or immigrating from Italy is beneficial. 
• Experience managing a section during peak service. 
• Makes a strong individual contribution to their team. 
• Shares our passion for authentic, quality produce and service.
