Role Overview: As the Pastry & Bakery Manager, you'll be at the helm of our bakehouse, overseeing all aspects of pastry and bread production. From crafting exquisite croissants and Danishes to perfecting our signature sourdough loaves, you'll lead by example, ensuring every creation meets our exacting standards of excellence. You will report directly to the operations manager who will offer all levels of support.
Key Responsibilities:
- Bringing your technical expertise to every recipe
- Managing all aspects of production, including ingredient sourcing, prep work, baking, and presentation
- Implementing and maintaining rigorous quality control measures to uphold our brand's reputation for excellence
- Utilising analytics to track sales trends, identify opportunities for growth, and optimise inventory levels
- Leading a team of passionate bakers and pastry chefs, fostering a culture of creativity, collaboration, and continuous improvement
- Handling staff rostering and management, ensuring optimal staffing levels while staying within budgetary constraints
- Collaborating closely with the management team to set financial goals, monitor performance, and drive profitability
Qualifications:
- Proven experience in pastry and bakery management, with a strong focus on sourdough and French pastry
- Expertise in analytics, with the ability to leverage data to make informed business decisions
