JOB TITLE: Pastry Cook

MAIN DUTIES / RESPONSIBLILITIES:
· Prepare a wide variety of cakes, sponges, biscuits, cookies, croissants, danish, tarts, pies, bread etc. following traditional and modern recipes
. Weigh ingredients, mix, prepare dough, laminate dough. weigh dough, proove dough, safely use the bakery's machinery, equipment and ovens
. Prepare all the pastries, cakes and desserts on the menu
. Follow recipes created by the chef
. Prepare chocolate mousse
· Make pastry fillings
· Prepare cream, chocolate and egg cream etc.
. Glaze buns and pastries
· Ensure raw materials and ingredients are up to the restaurant's standards
· Keep the working place clean and in good order
· Liaise with suppliers, restock fridges, rotate stock and check stock levels
· Check quality of material and condition of equipment and devices used for cooking
· Monitor stocks for baking ingredients such as flour, sugar etc.
· Perform all tasks required as a Pastry cook
· Grease, load, empty and clean baking trays
· Bake pastries and bread, managing the ovens
. Fill and decorate pastries and cakes using different icings, toppings , fillings etc
. Ensure presentation is consistent and up to standard
QUALIFICATIONS, SKILLS & EXPERIENCES
QUALIFICATIONS
· Qualified Pastry Cook with a minimum of Certificate III in Patisserie
SKILLS
. A passion for baking and a drive for excellence
· Skilled at mixing, laminating, depositing, prooving, and managing the ovens
· Decorating and piping skills, creativity
· Great attention to detail, consistency and reliability
· Time management and organisational skills
· Knowledge of health and safety principles
· Knowledge of food intolerances and preferences, such as gluten free, sugar free
Communication skills, emotional intelligence, teamwork skills, and a can-do attitude
EXPERIENCE
· Proven experience as PASTRY COOK, baker or relevant role
· More than 2 years experience in a commercial bakery
. Experience in a fast-paced, high volume, wholesale bakery would be an advantage.
