Job description

Swissôtel Sydney is a luxury five-star hotel located in the heart of Sydney’s business, retail and entertainment district. 

The hotel boasts 369 beautifully appointed guest rooms and suites offering contemporary living for the modern business and leisure traveller. Our facilities include the award-winning spa centre Spa and Sport, a restaurant and luxurious Arches bar, newly refurbished outdoor swimming pool as well as eight state-of-the-art meeting rooms including a heritage-listed ballroom seating up to 400 people. 

Swissôtel Sydney has an exciting opportunity for a motivated and driven Sous Chef to join our kitchen brigade. 

Reporting to the Executive Chef and Executive Sous Chef, you will have the opportunity work alongside an experienced team and assist in managing the kitchen operations for our outlets including Ten Stories Restaurant, In-Room Dining and Arches Bar.

Duties and Responsibilities (but not limited to):

  • Assist the Executive Chef and Executive Sous Chef in the supervision of the Kitchen and Stewarding team
  • Hands on day-to-day management of the restaurant, room service and Arches Bar, with support to conference food service operations when required.
  • Work in conjunction with service teams to ensure quality product and service to guests
  • Ensure food standards, preparation, presentation and cooking techniques are established and monitored to meet set guidelines
  • Ensure the highest standard of hygiene is practiced and maintained to meet Health & Safety regulations and HACCP food preparation guidelines

To be considered for this position, you must possess the following:

  • Demonstrated experience in a similar role or luxury/fine dining environment 
  • Encourage, support and lead the team to participate local and national culinary competitions
  • A creative approach to the production and presentation of all things culinary
  • Appropriate Trade qualification
  • Ability to build and create menus in line with brand guidelines and outlet identity
  • In tune with market trends and leading the restaurant & bar to be market leader within Sydney CBD offering.
  • Prior experience in training and developing the kitchen team
  • Sound knowledge of food trends, HACCP standards and procedures
  • Flexibility to work a rotating roster including weekends and public holidays
