The Opportunity
CC's Bar and Grill
Reporting to the Chef de Cuisine, as Sous Chef you will assist to foster a motivated team who are dedicated to providing the highest quality food experience that celebrates the best of Australian cuisine.  Drawing inspiration from the wild landscapes and unspoiled charm of the Australian outback, CC's Bar and Grill is redefining the traditional steakhouse.  Nationally recognised with a number of awards for excellence, we are famous for our steak, the majority of which is sourced from our backyard.

The stellar menu at CC's celebrates the best of Australian produce and is derived from quality and fresh harvest that befits the earthy tone of the restaurant.  Local ingredients and the finest beef are used to create the hearty, flavorsome dishes that offer exhilaration with every bite.
  
Your Responsibilities:

  • Pioneer the guest satisfaction at CC’s Bar and Grill by delivering exceptional culinary experiences.
  • Cultivate a culture of innovation and a penchant for pushing culinary boundaries.
  • Provide hands-on leadership during all service periods and shifts.
  • Collaborate closely with the F&B Service leadership team.
  • Ensure rigorous departmental training aligns with our high standards.
  • Foster seamless communication and coordination with all hotel departments.
  • Oversee workplace health and safety procedures.
  • Contribute to the creation of seasonal menus, promotional offerings, and event packages.
  • Partner with the Executive Chef to manage budget expectations through insightful analysis, forecasting, and controls.
  • Support efficient procurement, production, preparation, and presentation of all culinary delights.
  • Champion the hotel's food safety program to meet and exceed regulatory requirements.
  • Cultivate an engaged team environment with an outstanding local reputation, attracting and retaining top culinary talent.
  The Talent
  • Minimum Certificate 3 Commercial Cookery
  • Proven leader who will drive the kitchen team and work with the floor team to produce and deliver award winning cuisine
  • Experience in the control of food and labour costs
  • Well-developed communication and time management skills
  • A strong visionary with an ambitious expectation of guest service
