The Moonee Valley Racing Club is looking for an experienced hospitality professional with management experience join the team in the role of Duty Manager. The Duty Manager - TOTE Bar & Dining's responsibility is to oversee the day-to-day operational functions of TOTE Bar & Dining in conjunction and in the absence of the Venue Manager - TOTE Bar & Dining. This includes all beverage and food service operations.
TOTE Bar & Dining currently operates on a 4 day per week model, lunch and dinner from Wednesday to Saturday with the intent to open further service periods and has quickly become the heartbeat of Moonee Ponds. With our major development taking place across the Moonee Valley Park precinct, we already have our own community moving in and occupancy will be expanding constantly over the next two years around this Heritage-listed building and extensive parklands.
TOTE Bar & Dining is a modern lunch and dinner destination in our formal dining area, extending to casual dining in our Northern Terrace, including alfresco dining with access to 5000 square metre park at our doorstep, including playground for children, amazing racetrack shaped bar and extensive drinks menu and flexible functions and event spaces for private dining experiences.
We use well-sourced, high quality and sustainable produce. Our beverages range from carefully curated local and imported wines and spirits, extensive craft beer and creative cocktails.
Key responsibilities of the role include but are not limited to the following:
- Overseeing day-to-day operations, ensuring seamless service delivery.
- Providing support for the Venue Manager - TOTE Bar & Dining; implementing and enforcing venue policies and procedures.
- In conjunction with the Venue Manager - TOTE Bar & Dining, deliver TOTE Bar & Dining service standards, team guidelines and operational standards.
- Ensure that adequate stock is on hand for daily operations and any functions and events.
- Establish and ensure compliance with VCGLR / RSA, Food Safety program and WHS standards.
- Assist the Venue Manager - TOTE Bar & Dining to achieve monthly financial performance targets and implement actions to ensure achievement of financial targets for TOTE Bar & Dining.
- Assist the Venue Manager - TOTE Bar & Dining to achieve TOTE Bar & Dining COGS, wages, expenses and profitability margin targets.
- Provide strong leadership of the team and promote a positive culture with high engagement.
- 5+ years' experience in management level hospitality role with a high focus on quality & profitability, preferably in a restaurant or high-end pub environment.
- An engaging leadership style, a positive attitude, adaptability, resilience and strong communication skills with a solution-oriented approach to challenges.
- An exceptional understanding of what it takes to run a profitable business as well as exposure to commercial negotiations and a proven track record in leading high performing teams.
- Exceptional time management, methodical planning, organisation, and a great eye for detail.
- A desire to constantly exceed guest expectations and a passion for continuous improvement.
- Experience in successful people management practices; Ability to lead, manage, train and mentor a team of full time, casual and part time staff.
- Food Safety supervisor qualifications and Food Allergens Certificates.
- Genuine interest in hospitality operation.
