Overview

The Executive Chef is responsible and accountable for effective planning, directing and managing the kitchen operations associated with the RACV Cape Schanck Resort. This will be achieved by formulating and implementing clear strategies that complement the business plan and budget, ensuring the appropriate quality and level of service is provided to guests and that departmental policy and procedures are followed. This includes both the day-to-day function of ensuring the appropriate quality and level of service maintained, guiding the future direction of the Kitchen to increase quality, efficiency and staff commitment.

What we are looking for…

  • A passionate and driven leader who can focus on both the individual and the team
  • Experience overseeing a large team of chefs and stewards across multiple kitchens/outlets
  • Exposure to financial viability and sustainability that will grow our revenue and improve business efficiencies
  • Someone who is committed to understanding and further developing relationships with producers & suppliers in the Mornington Peninsula region
  • Executive level understanding of COG’s, P&L Control, Wage Costings, OH&S Practices/Compliance and Capital Budgets
  • Solid understanding of staff management practices including recruiting, rewarding, training, appraising, counselling and staff development
  • Extensive experience within a similar sized operation including A La Carte, C&E, Weddings, Fine Dining & Casual Dining
