Executive Manager – Food & Beverage

Everglades Country Club is a well-established hospitality business undergoing significant change to its structure and strategic mind-set. The Club has experienced strong growth and is preparing for further expansion. Our Food and Beverage business, which includes Nine Restaurant, Malt & Rye Whisky Bar, Main Bar, Vibes Alfresco, Everglades Events and the Halfway House, are important to our ongoing success.

The opportunity we offer does not come along very often and therefore we need an exceptional person to take charge of our Food and Beverage department. The Executive Manager – Food and Beverage is responsible for all aspects of planning and leading the delivery of contemporary, high-quality Food and Beverage experiences for our members, guests and event clients. 

You will be given the autonomy to further enhance the Club’s reputation and create a venue of choice for dining and hospitality service on the Central Coast. The role offers you a unique opportunity to demonstrate exceptional leadership, gastronomic proficiency and talent for providing extraordinary hospitality experiences.

This is a great opportunity for a self-motivated leader who is comfortable leading the kitchen and Food and Beverage service teams. You will need to be well organised and able to take charge of the daily Food and Beverage operations. 

Tasks and Responsibilities

  • Recruit, train, roster and support Food and Beverage staff.
  • Develop and implement Food and Beverage policies, procedures and service standards appropriate to achieve positive service and financial outcomes.
  • Develop and execute staff training plans aligned with Food and Beverage procedures and service standards.
  • Work with the marketing co-ordinator and management team to develop and deliver marketing initiatives to increase revenue and department profitability.
  • Develop and manage Food and Beverage budgets and KPIs. Implement effective methods for timely review of KPIs.
  • Manage supplier relationships, negotiate Food and Beverage pricing, oversee purchasing and stock management.
  • End to end management of all club functions and events.
  • Ensure compliance with all food safety certification and hygiene practices.
  • Oversee service flow, capacity management, seat turnover, ensuring consistent service standards and quality products are provided in all Food and Beverage outlets.
  • Work with the kitchen team to develop menus and daily specials to suit business needs and achieve targeted GPs.
  • Oversee the development and implementation of all beverage lists in conjunction with the cellar and Beverage portfolio manager.
  • Liaise with the kitchen team to ensure that efficient, well organised kitchen operations and consistent food quality are maintained.

Qualifications, skills and experience

  • Proven record of success as a manager in a high-volume, quality multi Food and Beverage outlet venue.
  • Relevant trade qualifications or equivalent certification.
  • Hospitality management qualifications.
  • Exceptional leadership and team management skills.
  • Creative and passionate to build a market leading Food and Beverage business.
  • Strong understanding of food safety and sanitation guidelines (food safety certificate).
  • Excellent communication, change management and problem-solving skills.
  • Ability to thrive in a fast-paced environment.
  • Excellent multi tasker.
  • Advanced Food and Beverage financial skillset including; budgeting, F&B analytics and KPI management.
  • Strong with all aspects of kitchen and bar operations and good knowledge of standard recipes and F&B cost management.
  • Working knowledge of club or hospitality industrial awards.
  • Able to work nights, weekends and public holidays as required
  • Computer literate (MS Office, kitchen and restaurant management software, POS, Function Tracker).
