With 517 newly refurbished rooms, 9 conference rooms, and multiple Food and Beverage outlets,Mercure Sydney is on the look out for a Food and Beverage Manager to uphold the hotel standards.We are and will continue to be, ANYTHING BUT NORMAL.Job DescriptionAs a Food & Beverage Manager, you will strategically lead the team to take guest satisfaction to the next level.Reporting to the Operations Manager, this role will be responsible for the following:

• Manage Platform 818 Restaurant, Eve's Bar, Room Service, Conferencing & Events to ensure quality and efficient service and standards whilst delivering a memorable guest experience.
• Review and analyse the daily operational needs maintaining beverage, labour, product and expenses on budget.
• Develop, implement and maintain quality standards for all Food and Beverage outlets, including the supervision and direction of the Food and Beverage team.
• Work closely with the Executive Chef and kitchen team to ensure Food and Beverage service is an exceptional guest experience.
• Recruit, manage, train, develop and inspire the Food and Beverage team.

Qualifications

• Minimum 5 years of similar leadership experience, ideally in the hotel industry.Tertiary qualifications in Business or Hospitality preferred.
• Proven capability in creating a positive and productive work environment
• Excellent understanding of hotel systems and revenue management principles
• Experience writing and interpreting budgets, controlling payroll expenditure and managing the overall revenue and expenses of a department.
• NSW Responsible Service of Alcohol Certificate.
