We are seeking a passionate and enthusiastic Junior Sous Chef to lead our restaurant team. The Junior Sous Chef will supervise the kitchen team and production of restaurant and function food as directed by the Executive Chef while maintaining the high culinary standards of Patina at Customs House.Patina at Customs House is a modern and contemporary restaurant offering relaxed dining with an emphasis on paddock to plate philosophy, Patina offers a unique shared dining experience overlooking the Brisbane River. the restaurant is located within Customs House which is one of Brisbane's heritage icons also includes private event spaces and the kitchen will cater to events both on and offsite.Staff are required to fulfil 38 hours per week across a seven day roster including weekends and evenings.Duties and responsibilities include, but are not limited to:Production of all foods within Customs House maintaining high standardsInvolvement in menu planning and implementation, and adherence to recipesLeadership and team development - supervision, training and motivation of junior staffCost control - kitchen stock, produce orderingFollowing all requirements in maintaining the Food Safety PlanMaintenance of the store and fridges in a clean and tidy mannerReceiving of goods, recording temperatures, stock storage and stock rotationMaintenance of mis en place for restaurant and functionsReporting of maintenance issues or equipment problems to senior chefAssisting the Executive Chef with the day to day activities of Customs House as requiredAny other duties as reasonably directed by your supervisorThis is a Full-time (100% FTE), Fixed-term position for up to 3 years.
