About the Role
We are on the lookout for a dynamic Pastry Chef, ready to inspire our pastry and bakery team.
What we are looking for:
- Experience in luxury hotel or high-end restaurant pastry departments.
- Trade qualifications in pastry or baking preferred.
- A commitment to excellence in product quality.
- Flexibility for varied work schedules, including weekends and public holidays.
- Knowledge of HACCP principles and accredited Food Safety Supervisor certificate.
Key responsibilities:
- Ensuring that oven temperatures are monitored with thought to the product as temperature and timing may vary. Product appearance is key for brand recognition.
- Maintain excellent presentation standards that are in line with market trends.
- Ensure the pastry department adheres to food safety practices.
- Ensure all food items are prepared in readiness for relevant outlets.
- Ensure items produced are consistent and of high quality.
- Liaise with Head Chefs and Food and Beverage (F&B) service team members regarding the availability of menu items, additions and any changes to offerings provided.
- Assist in kitchen stock takes monthly.
- Ensure par levels of dry goods are maintained.
- Ensure all food is stored and handled as per current food health and hygiene regulations.
- Monitor and control food wastage, maintaining a close eye on portion size and assisting with food cost.
- Assist in the completion of daily market lists and placement of orders to ensure delivery on a timely basis.
- Encourage and engage chefs to demonstrate their “creative flair” and create new items by embracing The Calile philosophy.
