We are looking to fill a number of positions, Pastry Chef and baker.
Pastry chef – someone who is experienced in general pastry and Viennoiserie production. Skills required are experience in the production and baking off of croissants/yeasted buns/ cookies etc and the ability to come up with new menu items. This applicant must have a minimum of 2-3 years proven industry experience and a certificate 3 & 4 in pastry with an availability for permanent, full time work. Additional skills will be looked upon favourably such as advanced diploma in hospitality management.
Pastry chef duties:
- checking the cleanliness of equipment and operation of premises before production runs to ensure compliance with occupational health and safety regulations
- kneading, maturing, cutting, moulding, mixing and shaping dough and pastry goods
- preparing pastry fillings
- monitoring oven temperatures and product appearance to determine baking times
- glazing buns and pastries, and decorating cakes with cream and icing and garnishes
Salary range is $70,000-75,000.
Baker - an individual who is experienced in making and baking sourdough bread. Other skills required are management of a bake off which includes, baking bread & pastry, packing and exceptional time management to ensure timely deliveries to our wholesale customers. This applicant must have a minimum of 1-2 years proven industry experience and be available full time in a permanent capacity.
Bakers duties:
- Checking the cleanliness of equipment and operation of premises before production runs to ensure compliance with occupational health and safety regulations
- Checking the quality of raw materials and weighing ingredients
- Kneading, maturing, cutting, moulding, mixing and shaping dough and pastry goods
- Monitoring oven temperatures and product appearance to determine baking times
- Coordinating the forming, loading, baking, unloading, de-panning and cooling of batches of bread, rolls and pastry products
- Operating machines which roll and mould dough and cut biscuits
- Emptying, cleaning and greasing baking trays, tins and other cooking equipment
Salary range is $65,000-75,000 dependent on experience.
Applicants will posses the ability to work as a part of the team, to give direction and take direction when required. Bringing innovation and creativity, attention to detail, maintaining high standards of cleanliness and organisation as well as an ability to share ideas. Each individual must have excellent time management skills and be able to work to a brief.
