Black Velvet Cakes is an award-winning Cake and Cupcakery bakery retail store based in Darlinghurst. We pride ourselves on ensuring our team work together and focus on pushing their creativity and skills into amazing products and avoiding mundane work by employing technology as much as possible.We currently have openings for FULL-TIME Pastry Cook - Cake Decorator (Senior) positions.The position responsibilities include:
- Being involved in all phases of our retail production environment - from receiving goods, production, decorating and packaging cakes for our clients.
- Ensuring our HACCP Food Safety Program is adhered to at all times. This includes checking and reporting hazard risks before and any time during production surrounding cleanliness of baking, decorating equipment and general premises, whether performing the cleaning tasks yourself or checking your team member's work.
- Quantity and quality checking the arrival of stock, including raw ingredients, mixes, decorative products, packaging, etc. Preparing fillings for cake and other products as required.
- Ensuring the success of our products by optimising the recipes and correctly selecting, weighing ingredients and preparing product mixes - including cake sponge, cupcake sponge, american buttercream icing, italian buttercream icing, macaron mixes, ganache mixes and more. Emptying, cleaning and greasing baking trays, tins and other cooking equipment will be required.
- Experience using automated depositors, dough rollers and cutting devices for biscuits.
- Use of Combi Ovens, from 6 to 40 rack and planning baking efforts (including batter filling, baking, cooling and cutting) to manage a wide variety of baking sizes, temperatures and times, minimising oven usage to save energy costs and optimising product appearance. Coordinating the loading, baking, unloading, de-panning and cooling of batches of cake and cookie products.
- Extensive experience in cake decorating, including cream, buttercream sponge icing cakes, pound cakes, shaping fondant cakes, decorative chocolate work, isomalt, fresh cream sponge cakes, royal icing and glazing product, where required.
- Actively use web-based ordering and operational systems to plan, progress and fulfil standard and complex orders.
- Have a current NSW Food Supervisor Certificate
- Completed a Cert III or higher in Patisserie, or at least 3 years relevant experience in an establishment producing biscuits, cakes and cake decorating.
- Experience in custom cake decorating, particularly Fondant, Fresh Cream, American Buttercream and Italian Buttercream on pound and sponge cakes. Decorating experience with isomalt, fondant, royal icing, chocolate and macarons is also required.
- Available Monday through Sunday from 4am. Overtime is common.
