About our Team:
As the Production Chef you will play an integral role in supporting the Senior Production Chef in providing leadership and guidance to the production kitchen team to ensure that the kitchen is run in an efficient manner and to ensure that exceptional levels of food excellence, presentation and customer satisfaction is maintained.
The well-established and supportive team is comprised of four Catering Attendants and another Production Chef, and they are responsible for producing over 5000 meals per week for our long-distance Travel Trains.
This is a permanent full-time position based in Bowen Hills, Brisbane.

This is a hands-on kitchen role, where some of the duties that you will be responsible for include:
• Co-ordinating, promoting and executing quality production outcomes in a kitchen environment
• Managing and performing food preparation and production in accordance with Hazard Analysis and Critical Control Point (HACCP) and The Food Safety Act;
• Co-ordinating and promoting quality team development including training
• Maintain an effective and efficient logistics chain by:
Minimising wastage (ie. full utilisation of stock, equipment and staff)
• Monitor and optimise the quality and efficiency of work practices through focus on quality improvement initiatives

Roster / Hours:
This position works between the hours of 0600 and 1600 and you will be required to work a rotating roster which will include weekends and some public holidays.
About you:
• Previous experience working in a high-volume kitchen. Any previous experience with menu development would be highly desirable
• Substantial knowledge of the hospitality/cooking industry with a focus on customer service and satisfaction.
• Strong understanding of food safety and workplace health and safety regulations and HACCP principles
• Ability to work effectively in a team and manage multiple tasks simultaneously
• Strong communication and interpersonal skills
• Hold a current ‘C’ Class Drivers Licence
• Hold a Food Hygiene certificate or Cert III in Commercial Cookery – highly desirable
