Hamilton Island is seeking a passionate and driven Restaurant Manager to lead our busy Pool Terrace Restaurant.
If you have a proven track record in a leadership F&B role, we want you to oversee our front-of-house team of up to 24 staff in a dynamic, 7-day operation offering a full buffet breakfast, lunchtime snacks, and à la carte evening meals, in room dining and Reef Lounge bar.
About The Role
Working closely with the Executive Food and Beverage Managers, you will manage day-to-day operations, ensuring the restaurant meets strategic, financial, operational, legislative, and quality goals. Your mission is to maintain an engaged workforce, uphold high standards of production, productivity, quality, and safety, and deliver exceptional customer service to create extraordinary experiences for our employees, guests, and community.
Your responsibilities may be, but are not limited to, the following:
- Oversee all restaurant operations, coordinating with kitchen, stewarding, and bar staff to ensure consistent, high-quality service and guest satisfaction.
- Lead and develop a highly engaged team aligned with HIE's Vision, Mission, and Values, fostering a customer-first attitude through effective leadership and feedback.
- Achieve budgeted profit by monitoring product, labour costs, and minimising wastage.
- Prepare staff rosters at least 7 days in advance, aligning with forecasted occupancy and events to ensure prompt service and control wage costs.
- Manage staff recruitment in collaboration with the recruitment department, conducting final interviews.
- Develop marketing and promotion plans with the Food & Beverage Manager to drive additional revenue.
- Oversee security systems and alarms, including training supervisors on proper procedures.
- Ensure EFT transactions, float balances, and cash reconciliations adhere to HIE policies, reporting discrepancies with detailed explanations.
- Process stock requisitions in accordance with par stock levels.
- Conduct performance reviews, appraise, encourage, coach, and counsel staff, addressing performance issues as needed.
- Maintain and enhance the restaurant’s image, suggesting improvements.
- Participate in training programs as requested by departmental managers.
- Implement policies and protocols to ensure future restaurant operations run smoothly.
About You
We are seeking a candidate with excellent personal presentation and communication skills, strong leadership, motivational, and people skills, resilience to work well under pressure, and the ability to be punctual, reliable, and flexible with shifts and rosters.
You will have:
- Responsible Service of Alcohol Certificate – RSA (Essential).
- Food Safety Supervisor Certificate (Essential).
- Driver's Licence (Essential).
- Diploma of Hospitality Management or equivalent (Desirable).
- Proven customer service experience as a manager, with thorough knowledge and skill set relevant to the restaurant's style (Essential).
- Proficiency in Microsoft Word, Excel, or equivalent (Essential).
- Financial management skills (Desirable).
- Certificate IV in Assessment & Workplace Training or equivalent (Desirable).
