The Bay Hotel Mornington is part of Ganley Group, which operates a number of successful venues in Melbourne and is growing quickly. This is an amazing opportunity for a talented and experienced hospitality professional to join a growing hospitality group with opportunity for further progression. Ganley Group has a head office based in St Kilda with a full time Graphic Designer, Bookkeeper, Marketing and Social Media Manager, CFO, Operations Manager and Executive Chef.
We are seeking a highly skilled and motivated Senior Sous Chef to join our team. The Senior Sous Chef will work closely with the Head Chef to ensure the smooth operation of the kitchen, maintaining the highest standards of food quality, presentation and kitchen hygiene.
Key Responsibilities:
- Assist the Head Chef in menu planning, development, and execution
- Oversee the day to day kitchen operations, including food preparation, cooking and plating
- Train, mentor, and supervise kitchen staff, ensuring adherence to recipes and food safety standards
- Maintain inventory levels and order supplies as needed in conjunction with the Head Chef
- Collaborate with the Head Chef to create innovative and seasonal menus that reflect our culinary philosophy
- Ensure compliance with health and safety regulations
- Demonstrate leadership abilities and strong communication skills to effectively coordinate with front of house staff and management
Qualifications:
- Proven experience in a similar role or as a Sous Chef or Senior Chef de Partie in a high volume kitchen
- Culinary degree or equivalent qualification preferred
- Extensive knowledge of culinary techniques and ingredients
- Strong leadership and organisational skills
- Ability to work well under pressure in a fast paced environment
- Creativity and passion for culinary excellence
