Casual Chef de Parties & Sous Chefs - Melbourne Cricket Ground

Delaware North are now recruiting highly experienced Chef de Partiesand Sous Chefs on a casual basis to join our culinary family at Melbourne Cricket Ground. The MCG is one of Australia's most well-loved venues, with a capacity of more than 100,000 and home to several Australian Football League teams, as well as cricket matches, concerts, an array of special events and year-round non-event day functions.

Our Chefs will play a key role supporting the delivery of high-end food offerings across multiple restaurants, corporate dining and functions, including the following:

• Hugh Trumble Café and Paddock Café - all day dining
• Revered fine dining in the Committee Restaurant - 'by Guy Grossi'
• Members only modern Australian cuisine in the the MCG's famous Longroom & Members Dining Room
• The best of Australian beef & seafood cooked over wood fire in the Jim Stynes Grill
• Corporate suites dining for up to 2000 guests

Responsibilities include:

• Support the day-to-day culinary operation across event-day and non-event day catering
• Maintaining food safety standards during high volume food preparation
• Support with control of the department budget and food costs
• Demonstrating leadership to a team of Casual Chefs, cooks and kitchen attendants 
• Combining with other F&B arms to provide first-class dining to all customers

The successful candidate will have:

• A successful track record working in kitchen operations 
• Sound knowledge of commercial cooking and venue/event experience 
• Experience with stock control
• Appropriate culinary qualifications 
• A passion for food and creative flair
• Excellent communication skills at all levels
• Strong team management and leadership
